If you have stopped eating meat and miss the delicious taste of some of your favorite meals, trust me, I know where you are coming from. As a child, I enjoyed Stroganoff. The creamy and hearty goodness of this filling meal always made my days better. When I stopped eating beef, as a youngin’, I missed this dish.
I remember crying myself to sleep each night because I could no longer each a large bowl of Beef Stroganoff. (Okay – I am exaggerating, but you get the point)
This unbelievably good Vegetable Stroganoff is full of flavor and is a vegan friendly dish. The great thing about this recipe is that you don’t need any expensive ingredients. In fact, this meal serves about 4 people and you can serve it up for about $20. For all of the people who think being a vegetarian or vegan is expensive… “Think Again.”
